Cassava flour is a gluten-, grain- anf nut-free flour. It comes from the whole cassava root, which is simply peeled, dried and ground. This makes cassava flour different from tapioca flour flour. This also means that cassava flour has more dietary fiber than tapioca flour. Yes, the cassava root contains naturally occurring toxic cyanide compounds (also found in almonds and spinach!) but is only if the cassava is eaten raw. It is very rich in carbohydrates as it comes from a starchy tuber. For instance, per 100 grams, cassava has double the calories and carbohydrates as sweet potato.
